Samples of locally grown and made chicken sausage from First Fresh Foods in Gainesville arrived at my home at just the right time. My family has been cutting back on red meat and was really missing pork sausage. Now that we have tried their flavorful chicken sausage with seasonings you can actually see, we aren’t missing pork sausage at all.

The chickens used to make their sausage are raised within miles of their facility, and the other farm-fresh ingredients are local too. First Fresh chicken sausages contain no MSG, no meat by-products, and are an excellent and much healthier alternative to pork sausage with less than 50% less fat than traditional pork sausage. It tastes so fresh out of the package and freezes nicely too.

The chef executive officer’s wife was recently diagnosed with celiac disease. Needless to say, the company is very passionate about ensuring their sausage is gluten-free and free from cross contact with gluten. First Fresh Chicken comes packaged ready to cook in all natural casing in both Mild Italian and Original Breakfast. A new Hot Italian flavor is coming out soon.

What I like most about the sausage is how easy it is to take out of the casing and reshape. Crumble it up and add it to soups, quiche, omelettes, breakfast casserole, pasta salad, or use it as a topping for pizza. Once removed from the casing, why not shape it into patties and serve it on biscuits or English muffins. Slice the sausage and add it to roasted vegetables, make kebabs, or throw it on the grill for a quick meal.

The sausage has a nice spicy kick and isn’t dry or rubbery like other chicken sausage products. This sausage also doesn’t have a high sodium content, relying on the spices for flavor. My family actually looks forward to eating it just about any time of day and I like knowing that it is gluten free and made locally.
